I made my “thin” pancakes this morning (the ones from Consumer Reports), and wouldn’t you know it? For the first time ever (and believe me, I’ve made these a LOT), they came out thick.
Thick, fluffy, and delicious. Not quite as thick as the “Thick Fluffy Pancakes”, but certainly not what I’d call thin.
I guess this is due to one or more of the following:
A. I halved the recipe because I only had one cup of buttermilk. Maybe this affected the end result.
B. This was the first time I’d made the recipe using brand new baking powder that I just opened this very morning. Yeah, more likely. I never use expired stuff, but it’s not usually brand spankin’ new.
So… apologies to anyone who might make the “Thin” pancake recipe and have them turn out thicker than they’d expect. But they’re still delicious anyway. Mmmmm.
