This morning my husband and our neighbor headed off on their motorcycles for a quick trip to Wendover Nevada, for a little bit of gambling and relaxation. It’s also giving my husband the chance to do a test run with his little Unigo trailer, which he hasn’t used for a couple of years. We’ll be going on a long trip to South Dakota later this year, and we want to make sure the tire is riding well.
But before he left, I whipped up a couple of Norma’s Individual Oven Omelettes. I sauteed some Japanese eggplant (picked from the garden this morning), a bunch of fresh herbs from the garden (oregano, parsley, thyme, and a touch of rosemary), and some mushrooms (not from the garden, of course.)
I added some feta cheese, some chopped black olives, and a sprinkling of Parmesan cheese on top. Dang. I should have thought to add some arugula.
Mmmmmm. We also had some fresh blackberries (again, picked from the garden – my first picking of the year), with a dollop of vanilla yogurt.

Delish!!!!! Aren’t they easy and perfect? They’re also very packable for lunches, and are good cold or at room temp. Cute bike and trailer!!!
