Darn it, Cookie!

Look what SHE made me do:

Those are Cinnamon Roll pancakes, my friends. Pancakes loaded with a cinnamon/sugar swirl, all caramelized and crusty, with a cream cheese glaze on top.

It was totally Cookie’s fault.

I’d had this recipe for about a year, never made it, and had totally forgotten about it until she waved it under my nose again. Could. Not. Resist.

They were just as good as you might imagine them to be. The Pontiff’s response after taking his first bite? “That’s really good.” Then a few minutes later: “They’re very rich.” Another 30 seconds go by. “Intense.” After finishing two of them, he said “You couldn’t eat those every day.”

I agree. They were really good, but I’d definitely save them for a special occasion. I think they’d be good without the glaze, too, if you want to skip it. I didn’t use the pancake batter in the recipe, I used my own favorite (the “Thick, Fluffy” ones in this post), but just half a recipe. I would have used hers just to try it, but I wanted to use up some buttermilk that I had in the fridge.

So c’mon over, Cookie. There are still some waiting for you.
